These crispy apple cider chicken thighs are first seared skin-side down until golden, then roasted over carrots, parsnips and Brussels sprouts. While the chicken rests, all of those browned bits are turned into a flavorful pan sauce with apple cider, shallot, Dijon and fresh thyme.

Brussels sprouts: Clean and halve them so the cut sides caramelize as they roast.
Fresh thyme: Whole sprigs perfume the chicken and vegetables as they roast.
Oil, salt and pepper: A neutral high-heat oil like avocado oil or olive oil both work.
Apple cider: Use sweet, (nonalcoholic) apple cider. Not apple cider vinegar!

Flour: A small amount thickens the cider and broth into a silky pan sauce.
Dijon mustard: I have a love of dijon, so I tend to use it a lot. It adds a little heat, tang and depth of flavor.

Fresh thyme: Chopped thyme because it’s an earthy and cozy herb for the fall.
Heat the oven to 425°F. Pat the chicken thighs very dry, then season them generously with salt and black pepper. Cut the carrots and parsnip into long, 1/2-inch-thick strips and halve the Brussels sprouts.
Heat a large oven-safe skillet over medium-high heat and add a swirl of oil. Place the chicken in the hot pan skin-side down. Cook for 10–12 minutes, shifting the thighs around the pan as needed for even browning, until the skin is golden and releases easily from the skillet.
Flip the chicken thighs. Add the carrots, parsnip, Brussels sprouts and thyme sprigs to the skillet and toss in the rendered chicken fat. Drizzle them with a little additional oil if the pan seems dry, then season with salt and pepper. Arrange the vegetables in an even layer and place the chicken thighs on top skin side up.
Transfer the skillet to the oven and roast for approximately 25–30 minutes, or until the vegetables are tender and the thickest part of the chicken reaches 175°F without touching the bone.
Transfer the roasted chicken and vegetables to a platter.
Return the skillet to medium heat. Add the shallot and cook for about 4–5 minutes, until softened. Add the garlic and chopped thyme and cook for 1 minute. Sprinkle in the flour and cook, stirring constantly, for another 1–2 minutes.
Slowly pour in the chicken broth and apple cider while whisking and scraping up all the browned bits from the bottom of the pan. Whisk in the Dijon mustard and sherry vinegar. Simmer for 5–10 minutes, or until the sauce is smooth and thick enough to lightly coat the back of a spoon. Taste and season with salt and pepper as needed.
Spoon the apple cider pan sauce around the chicken and roasted vegetables to keep the skin crispy. Serve the remaining sauce at the table.
Dry the skin well. Moisture is the enemy of browning, so pat the thighs thoroughly with paper towels before seasoning.
Start with a hot skillet. The chicken should sizzle as soon as it touches the pan.
Do not force the chicken to flip. Once the skin is properly browned, it will release much more easily from the skillet.
