Roasted Broccoli with Peanut Sauce

A fun twist on broccoli that gets roasted in the oven until it's a little bit charred then topped with a delicious peanut sauce, fresh cilantro and peanuts for a nice crunch.

Ingredients

  • 2-3 heads Broccoli
  • 3 Tbsp Avocado Oil or Olive Oil
  • 1 Tbsp Cilanto Chopped
  • 2 Tbsp Peanuts Chopped
  • 1/4-1/2 cup Peanut Sauce

Instructions

  • Preheat the oven to 425° and arrange the oven rack in the middle.
  • Cut the broccoli into bite sized pieces and place on a baking sheet.
  • Generously drizzle the broccoli with the oil and season with salt and pepper. Toss to thoroughly coat.
  • Roast the broccoli in the preheated oven for 25 minutes or until starting to char.
  • To serve, transfer the roasted broccoli to a serving plate, drizzle with a peanut sauce and garnish with cilantro and peanuts.
