Healthy Chai Carrot Cake with Date Caramel (High Protein Snack Cake)

This chai carrot power cake is packed with protein, warm spices, and a naturally sweet date caramel swirl. Made with wholesome ingredients, it’s the perfect healthy snack or breakfast cake.

Ingredients

For the Chai Carrot Power Cake

  • 1 cup shredded carrots
  • 1 cup whipped cottage cheese
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 2 eggs
  • 1/4 cup milk
  • 2 tbsp coconut oil melted
  • 1 cup oat flour
  • 1 cup white whole wheat flour
  • 1/2 cup protein powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp chai spice see below
  • 1/2 tsp salt

Chai Spice Blend

  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp cardamom
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg

For the Date Caramel Swirl

  • 4 soft Medjool dates pitted
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup avocado oil
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp chai spice
  • 1/4 cup hot water

For the Cream Cheese Yogurt Glaze

  • 4 oz cream cheese softened
  • 4 oz plain Greek yogurt
  • 1 –2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Instructions

For the Cake

  • Preheat oven to 350°F and grease or line an 8x8 baking dish.
  • In a large bowl, whisk together: whipped cottage cheese, maple syrup, eggs, milk, melted coconut oil and vanilla. Stir in shredded carrots.
  • Add dry ingredients: oat flour, whole wheat flour, protein powder, baking powder + baking soda, chai spice + salt. Mix until just combined.

For the Date Caramel

  • Add all ingredients to a blender: dates, almond butter, maple syrup, avocado oil, vanilla, salt, chai spice, hot water. Blend until smooth and creamy.

Assemble

  • Pour batter into prepared pan.
  • Spoon caramel over the top in dollops. Use a knife to gently swirl.

Bake

  • Bake for 30–35 minutes, or until set in the center.
  • Let cool completely before adding glaze.

For the Cream Cheese Yogurt Glaze

  • Whisk together until smooth: cream cheese, greek yogurt, maple syrup and vanilla.
  • Spread over cooled cake, slice, and enjoy.
